From sizzling plov to delicate manti, here are the dishes that define a Central Asian table — and where to find the best of them.

Plov, the national dish

No meal defines the region like plov — rice slow-cooked with carrots, onions and lamb in a wide cast-iron kazan. Every city claims the best version, and in Tashkent whole restaurants are dedicated to cooking it by the cauldron.

Bread you’ll never forget

Round, golden non is baked against the walls of a clay tandyr and treated with near-sacred respect. Each region stamps its loaves with a different pattern, and Samarkand’s dense, glossy bread is famous across the country.

Dumplings and skewers

Steamed manti, fried samsa and charcoal shashlik round out the table, usually alongside crisp tomato-and-onion salads and a pot of green tea to cut the richness.

Where to eat

The best food is often the simplest: a bustling plov centre at lunchtime, a bazaar samsa stand, or a family chaikhana where the tea never stops flowing.
